Ajo is our Cuban and Puerto Rican grill offering a fresh, modern twist on some classic dishes I grew up eating as a kid. Our name, Ajo, means garlic, and is an essential ingredient in nearly all of our dishes. The aroma of garlic freshly mashed in a pilon or just sautéed in a pan, brings back childhood memories of my family gathering around the table for dinner and for holiday celebrations.
